Harold’s Honey Ale

Sam and Jay alongside Haymarket brewing crafted the recipe with “The goal of the collaboration is to start a conversation about, as well as celebrate diversity in the craft brewing community.” In the

recipe, they utilize honey from Sweet Beginnings, beekeepers program that employs ex-offenders to tend to the bees and make the honey.

Pilot Project

Brewery Incubator, Tasting Room & Café located in our backyard -- Logan Square. The project was created as a collaborative and curious brewing and tasting room to support talented brewers in an industry with exceptionally high barriers.
Pilot serves as a launch pad and offer assistance to brewer. We proudly offer the project's rotating craft seasonal!

Koval Cranberry Gin (Arianagroni)

Founded in 2008 by husband-and-wife team, Dr. Robert Birnecker and Dr. Sonat Birnecker Hart, KOVAL began as the first distillery to open in Chicago since the mid-1800s.

Prior to starting the distillery, Sonat and Robert had established careers in government and academia,but chose to forge a new path together. Their goal with KOVAL was to marry centuries of tradition from Robert's Austrian distilling heritage with state-of-the-art modern technologies - all with the aim of bringing heightened levels of consistency and creativity to the world of spirits.
