Chef Oliver Melgar

Restaurant Chef, Oliver Melgar leads the culinary team at Raised, An Urban Rooftop Bar where he craftfully designs menus that highlight seasonal, local ingredients.
Originally from California, Chef Oliver keeps those roots close, enmeshing the coastal California cuisine with Chicago fare creating an eclectic yet approachable menu. Oliver's culinary career started in 2016 with the Four Seasons in California which led to an opportunity at the Four Seasons Chicago in 2018. Chef Oliver's talent comes to live when he spends time creating authentic dishes made from locally sourced ingredients. Drawing from his upbringing in the Golden State as well as time spent exploring and tasting around the world as a photographer for National Geographic, Chef Oliver delivers a wide range of unique flavors for all to enjoy.

  • Monday - Saturday: 4 pm - 12 am
  • Sunday: Closed

Kitchen closes at 10 pm daily
